Put together a pulled beef taco bar for a bday party last night, huge hit.
Real simple. Rubbed 1/2 chuck roll with mixture of cumin, chili powder. garlic powder. Put it on the grate on the 070 @ 325°. After 2 hrs I put it in a tin with Beef Broth, Dr. Pepper & Chili Sauce. Covered & brasied for (4) more hours (tried probing at 2 & 3 hrs but it just wasn't happening). All the braisng liquid thickened slightly & became a nice sauce. When pulled, a nice amount on a tortilla w a little sour cream, cheese & just a bit of lettuce along with some fresh salsa. Gonna try this again soon. No pron cuz I was running late. Didn't expect to have to braise it for 4 hrs.

Also, for all the fixens I froze about ½" of water in a large tin & placed rectangular shaped glad dishes in it perfectly no muss no fuss. At the end of the night there was still a thin sheet of ice in it.
