View Full Version : The Beginning of a Long, but Hopefully Tasty Weekend (w/pron)

So the beginning of a long weekend of smoking pulled pork for 50 people for the brother-n-laws graduation is starting.

I spent last night making up rub and the start of mop sauce. Woke up to this scene this morning:

We are now at 2 triple batches of rub. Mop sauce is cooling off so I can run it through the blender, and get it into jars for travel tomorrow night.

Conrad my meat man called and the meat was in. Little dissapointed in what he could get his hands on. He has usually comes through with 10-12lber's. Instead he got me 5 shoulders at an average of 6.93lb for a total of 34.68lb.

Got them trimmed, oiled, rubbed up, wrapped in foil and back in the fridge.

Off to load up the charcoal, and all my tools. The old man will help me get the smoker loaded tomorrow afternoon before we leave.

Thought I would share what I have cooking this weekend. Will keep things updated as I can from NE Colorado at the graduation.

One of those freak Winter Storms that blows through here every now and again. I should have gotten a pic with my snow plow that has been sitting since Feb.

Neighbor lost 4 trees. Snow was so heavy that it bent them over and snapped them about a foot off the ground. She just planted them last year.

Well boys and girls,

It has been a long night from hell.

Started the fire at 22:00 yesterday. No sooner than I started the chimney, the skies opened up and dumped on us. Was able to get things going, but it took over 2 hours to get the chamber up to 300.

Finally got meat on at 00:30.

We had some problems with my charcoal basket, for some reason the expanded metal was too small on the bottom and the ash would not fall through. Had to pull it out and go back to the old grates.

6 hours on and this is what they look like.

Got a bout 20 degrees to go before we pull them off. Should be about 1, just like I figured.

Looking good so far.

Hope it warms up outside for you. Snow in May? Global warming? Don't hear Al Gore ranting these days. It's been rainy and cool here too.
