I love beans! I love all kinds of beans cooked just about any way. I love
them steamed, sauteed, baked, fried and refried. Here is a quick recipe for
the latter. These are refried beans taken to, dare I say it, another level. I
generally hate that expression, but I couldn't resist. Sorry.

I normally try to say something more about the recipe at this point, but I'll
be honest and say that I don't know what else to say. They are beans and
they are good. There. That's all I've got.

Let's get crackalackin!

Ingredients
1 can (15 oz) Original Ranch Style Beans
1 can (10 oz) Rotel Tomato & Green Chilies, undrained
1/2 Medium red onion, diced
1/4 cup Water
2 tsp New Mexico chile powder
1 Tbsp Oil

Method
Heat the oil in a medium sauce pan.

Add the onions and saute until translucent.

Add the chile powder and saute until the onions just start to brown.

Add the Rotel and bring just to a simmer.

Add the beans and water then bring it back to a simmer.

Simmer covered for 30 minutes, stirring occasionally.

Mash the beans with a potato masher.

Adjust the consistency as needed by cooking uncovered or adding water.

Serve topped with a little grated cheddar or Colby-jack cheese and some
sour cream (optional, but highly recommended).

Those do look good. :thumb: I'm wondering now about how they'd taste if you used bacon fat instead of oil. Hmmmmmm.

This is VERY close to my refried bean recipe. I too use ranch style beans as on eof the secret ingredients. Thanks for sharing.

I love beans too! I'm disappointed in your recipe this time, though. I won't ever go buy those canned products. To me, the only recipe worth beans on any BBQ site calls for no or very minimal amounts of processed or canned foods. I don't care if you use a can of diced tomatoes, but start with dry beans, soak them, simmer them .. like that.

Anyway, I'm 100% certain that your refries are wonderful the way you make them. I just won't make them that way, sigh.

Thanks John, those look good! I think there is nothing wrong with short cuts when time is short. Someone else soaked and simmered the beans for you! How convient is that!

The beans really look great. I think I'll give them a try; I'm going to add a couple chopped japs to them though for a little extra spice. Thanks for sharing.

Some may have the time to soak and cook beans, and that's cool. However, my recipe is for the folks that need something good that's relatively quick on a weeknight.

John, the guy is from Seattle, where it rains day in and day out.....I'm sure watching a pot of beans soak is a must for staying off the psycho tropic pharmaceuticals out that way......I kind of know what he's talking about when we have our little snowstorms here in Buffalo.....but hey.....in the summertime, or when there's a football game to watch, I'm cookin em your way ! They look awesome !

I'm not a Baked Bean fan, but I do appreciate a good plate of beans! I grew up on pinto or navy beans and cornbread.

Would you say that these beans you eat AS a meal or a side? Spicy?

OK after bitching about this recipe not going all the way down to dried beans I tried it this weekend for the guys as a side dish. Well, the main dish I made was good and they ate a lot of it, but they *fought* over the beans!

I used home-ground ancho chili powder instead of New Mexico, though. Everything else exactly the same.

Really good recipe, John. Quick and easy. And absolutely bursting with flavor!

I have cooked your "beans for a crowd" (I love beans!) many times. I cook the onion on my smoker and then the beans in a Dutch Oven on my smoker. I intentionally overcook the beans until they are soft and mushy and delicious. Same idea, I suppose.
Anyhow, I love your bean stuff! I have not been disappointed. Thanks!

I'm a firm (no pun intended) believer that beans are one food that are just
about as good canned as they are fresh.
