Been asked to do a 2 meat dropoff for a retirement party for 90 people. ShouLd I charge per person or by the pound? I was figuring 4x cost of meat/supplys. Not sure what the standard is, if there is one.
Brisket/Pulled Pork, they are doing the sides, salad, rolls, etc.

Per person is how I would charge - Either shown pp or as a single charge. 4x is not a bad number if you can get it. $160 in meats, plus rub, charcoal, pans, sauce @ 4x cost = about $800 for dropoff - May be a little salty, and 3x might be a better number for dropoff.

Watch out, because a lot of "backyard" caterers will do the whole deal for $10 a head...

I was thinking 60 lbs each of uncooked would yield a little over 30 ea, is that too much? Probably closer to 50 lbs maybe?

90 People here in Missouri would be 35 pounds cooked, 70 raw. I'd sell it for $5 a head (easier to swallow than $12 a pound). Should net around $250.00.

Make it worth your time or don't do it. No bragging rights in being used and abused.

Consider what you are working with, based on your signature, you are cooking with a few smaller cookers, That means a little more work. Most folks don't consider the amount of work it takes to prep, plus the space needed. Cooking for 90 and cooking for 200 is almost the same thing when it comes down to time.

You need to put a price on your time. I would probably consider that a good day plus worth of work. Heck the shopping takes time. I would go for $500 profit. You will earn it.... So take cost plus 10% then add $500. Plus 10% because of the wear and tear on the pit, cost of rub, foil, charcoal, wood, plus all the other stuff that you dont consider.

Pricing is area dependent. You can't compare California pricing with any other state. Missouri at $5 a head may be high but in California, especially SoCal you will need to get at least $7 a head for a drop off if they are close and you don't have to drive all over L.A. to get there. It takes longer to get from one part of L.A. to another than it takes to drive across the whole state of Missouri.

ok I will chime in with my question 200 people pulled pork in calif.. just cook meat after buying it I was guessin 34 butts what do you think I should charge ????

120 lbs of uncooked butts - $120 cost plus all the supplies - call it $175 in cost. Question becomes what is their budget? 3x cost = $525.

200 for pulled pork only - $660.00. Butts are over $1 now.

what are the two meats? itemize everything that goes into your cook. Spices for rub, sauce ingredients, by the ounce of finished product(x3). Raw meat cost x4. Figure in your time (just because we love it, doesn't mean it's free for others) and charge accordingly. Anyone charging $5 or $7 pp isn't looking to make a living at it. If your product is good, charge for it. I live in jerkwater, pennsylvania and get $12.00/pp for 2 meats.

here in buffalo we get 10.95 per pound for pork and 13.95 per pound for pickup orders.....we charge an additional fee for drop offs.....makes sense to keep the food and labor seperate from the travel.....set a base price for travel and then so much per mile outside of a radius of say ten miles......usually this also provides the choice for the customer to save some money if they want to by sending someone else to spend their time and gas to get the food.....

$600. They live 2 miles away and it's a stop and drop. Pretty easy. Already have money in hand.
