Grilled some backstrap tonight. Turned out great.

Rubed it down with olive oil and Cavander's. Seared it and then cooked it indirect till perfect! It was pretty freakin good.

A buddy of my wife's hunts and is supposed to get me some deer. I cant wait. My pallet needs new flavors. Just an FYI, peanut butter and jelly pizza is good:)

And that my friend is the way venison is done right. Very nice work. So many overcook it. That there is perfection. Now ya got me thinking. I have a freezer full of venison. I don't kill em but I'll sure eat em.

Real easy to do on meat as lean as venison. That's why lots of recipes include wrap in bacon. I've never injected any then slow smoking but will be trying that hopefully this winter (struck out hunting last year).
