Couldn't make it down to my buddy's restaurant, Q4U in Salt Lake City, today to hang with a bunch of the other Utah cooks but it was just a capital B, Beautiful day in the Cache Valley so I had to cook something. Earlier in the week I found a turkey in the back of the freezer from the last holiday season. Actually my friend Courtney was asking about cooking one he had, so I went looking. So the combination of these two things can only lead to one conclusion... Here's the pics.

Cut this bird to pieces just to make the cooking quicker and more even. Removed the skin so the smoke could find it's way deep into the meat and then hit it with kosher salt and coarse ground BP.

Right after I got that on, I had to run to Wally World and somehow this tasty little pork loin followed me home http://utahbbq.org/images/smilies/icon_mrgreen.gif So I covered him with some Citrus Grill rub and on he went.

Turkey only took about 2 1/2 hours at 230. I pulled it, hit it with a quick brush of butter and foiled to rest.

Another surprise was waiting for me as I waited for the loin to finish up, out of the blue there appeared a couple of J'ville brats that leapt out at me from the depths of my smoker. I only ate them in self defense http://utahbbq.org/images/smilies/icon_evil.gif

That loin finally decided to give in and call it a day, there will be some tasty sammies at work this week!

So what to do with some freshly smoked turkey breast when it's not T-day... How about split a ciabatta roll, hit it with chipotle mayo, throw down a layer of fresh sliced tomatoes then a thick layer of the turkey followed by a few slices of jalapeno jack, some fresh spinach leaves, a few slices of cucumber and a nice pile of thinly sliced red onion. And just in case this might not do the trick I added a nice helping of my wife's homemade potato salad to the plate...

All this and I got some "honey do" crap done too...
