Was dinner tonight. Pick up a nice pack from Costco, Steaks were almost 2" thick. Did 2 with a heavy Salt bath, had to try it.

I would not do this again, just do not see the point. Taste was altered but to me not in a good way. The beefy flavor was better with the non salted, tenderness about the same. I will try Prime next time.

You can see the difference in the Steak of which ones were salted, Looks good!

Added some red potatoes and some home made Garlic butter (before the Basil and Parsley.

Steaks on the Weber for about 20 minutes over Med High heat.

Those steaks look fabulous. I've never felt that good top sirloin needed a lot of extra pre-grilling attention - just don't overcook it and it is plenty tender, with a bold beefy taste. The occasional piece of grizzle is dealt with with a quick pre-grill trim or just cutting it off and tossing it aside while eating. That is a great looking cook.

I did a similar thing with tenderloin(beef). However I made a paste out of kosher salt and then grilled. Mine came out great...but the it was case-hardened when complete. Knocked off all the salt and dug in. Might want to try it that way. Real juicy!

I've actually seen a technique where the meat is encased in rock salt then cooked - the salt forms a crust that actually is cracked away and comes off in one piece - it was pretty amazing to see and is supposed to make the meat very flavorful. I didn't get to eat it - saw it on the TV - may have been done by somebody who stayed at a Holiday Inn Express last night.
