Smoked a butt Sunday in some really nasty weather. So, made a few pulled pork sammies and the rest went to tamales last night. These were really good. Acutally bought a jar of Adobo and mixed with fresh made chicken broth and a few spices. Then added the pulled pork for the mole. The thread has been great to help me with the tamale making so thanks brothers and sister!!!!

I would love your recipe I could eat my weight in those and don't have any idea how to make them.

Alan, you gotta try these! I am not the person to ask about making tamales. This is new to me so I am just learning. First go around I boiled the dried peppers, added some stuff, and pureed the mix for the mole. It was okay but this time I went with Adobo from the hispanic market. They know a whole lot more than me about making this. Glad I did, cause it was really good. Easy, but needed a better base line.
The mole recipe is on the jar, and the masa recipe is on the bag of masa mix. It was BobBrisket, I think, that said to make sure to use lard in the masa and also make fresh chicken or pork broth for both the mole and masa. Also spice up the masa with some spices of choice as well. He said it really makes a lot of difference. I always pay attention to his posts and appreciate him sharing some ideas. YouTube is a great sourse to research as well. I have a much better appreciation about why our friends south of the border do these as an important family event for special occasions. It is time consuming but now see why it brings family and friends together to cook something so delicious on special holidays. Alan, you gotta do these!

Thanks for the kind words, Meat! They are truly a labor of love. I wrote an article in Issue 2 of the Smoke Signals Magazine on tamales with play by play on tamale making. They really aren't hard to make, they just require a good amount of labor, but not difficult.

I can tell by the pic of the neckid tamale that they came out just right Brother. That glossy sheen is the sign of a well made and great tamale. I'll need to keep the adobo idea in mind for my next batch. You can also use the mole sauce. Much sweeter, but still good eats.
You KNOW I'd hit those............

That will definetly be on my weeks to do list. My wife buys them from an older mexican lady who also makes desert tamales and they rock but I want to know how to make them. thanks for the info everyone I will post when we make them.

You got that right and it leads to the easy un-roll-ability. I like that South Texas size too instead of the mambo ones.
