View Full Version : **Rapid Fire Bullet Brisket**

I trimmed up a 9lb CAB Brisket, removed the point and cooked them High Heat on the 22" WSM.
Mix of lump, Stubb's and CompK in my 14" expando charcoal ring, Cherry and Oak for smoke.
3.5 hours for the flat, 4.5 hours for the melt in your mouth chunks 'o beefy point!
Slabs rub/Cowtown sauce

nice lookin brisket, I always cook brisket whole, maybe I'll go that route next time.

What was your rack temp and finishing internal temps?
I go by dome unless I'm using a Guru.
Basically this is a no-brainer cook!
Fire up the cooker and let it rip, put the meat on and set a timer for 2 hours. Temp it and foil at 160-170* then probe or fork it at an hour. Don't go by internal temps-they will be sky high from the foil, this is all about tenderness!

Judging by the smoke ring, it looks like you removed all of the fat from the flat. Am I correct?

Real nice looking brisket. I particularly like the 'let er rip' attitude that turned out some good looking Q, looks like the point would make a fine chopped sammie.
