View Full Version : Smoking a whole KC Strip Roast any suggestions!!

Our local store had KC Strip Roasts on sale for $3.99 a pound. I bought one and was wanting to smoke it whole kinda like a prime rib, any suggestions on an internal temp for med rare. Was unsure if I should stay with the 140 like I would a prime rib.

Depending upon size, I would go 135F to 140F and pull it to rest. For larger roasts, I pull a little earlier to allow for carryover heat.

Oh boy, think I'd have it cut up into 1.5 inch thick steaks!
Not sure a NYS roast will cook up as nice as a prime rib, if its big enough cut it in half and give it a try. Save the other half for those fat steaks! Good luck.

I'd probably go to 130 then tent and rest for 15 or 20 mins. temps will climb slightly. If anyone else in family is squeamish about pink meat, then throw their share on the gasser for a few mins.

I just did a New York Roast - same thing (shhhh in the oven) on Wednesday. It was about 6-7 inches wide and I cooked it at 225 until it got to 135 internal. Pulled in, covered with foil (2 layers) and let sit for 20 min.

Also, in my humble opinion a NY/KC Roast is much better than a rib/prime rib roast. Less fat and better tasting.

Can't believe that I just finished eating french toast for breakfast and now am staring at that pron thinking how much I would like a steak right now.

nice looking roast! I like me some NYS roasts as well..I take mine to 125 and pull them and let em rest...they will get to 130 sitting there
