Caught this guy this after noon and thought Id take him home with me. Grilled him up with some Hungarian Hotwax peppers I had from last years garden. Stuffed the peppers with Chiorizo. It was awesome.

I'm a jealous man of both your fishing and your fish cooking. What'd you do to the trout?

I dont like to do much to trout. I gutted him and rubbed him down with sea salt, pepper, tyme, and olive oil.

Nice fish.
Nothing better with fresh fish than a simple salt, pepper and oil seasoning. Peppers look good too. Are they like japapenos?

Hot wax peppers are not like a jalapeño. But they can be very hot sometimes depending on when water is restricted during their growth. They are like the banana peppers you get on a pizza, but these were not pickled.
Rick and Boatnut, yes it is a stocked pond in NE Ohio called Judges Lake.
The trout stocked by the state are pretty easy to catch and they taste great when you get them out of the cold water and eat them fresh.
Rick when I lived in SW Ohio I used to catch them at Rush Run this time of year.

I've never grilled it like that. Always foil pouched it with celery, cilantro, carrots, and japs slices and butter. Hopefully, this summer brings some trout my way up in NM. If so, I'm trying it grilled.

I always have trouble grilling fish directly on the grates - they tend to stick and fall apart when I try and flip them. So I use foil and butter when I do it.

Looks good by the way.
