Hi guys.

I'm going to have my uncle build my USD but on a stick more then the normal version and I will post updates asap. And keep everyone updated on how the project is going.

You can get those used. Saw one on Craigs list for $50.

Brand new, I saw one for $169.00.

Offset is the way to go.

Many of the people I know aren't happy with a UDS type smoker. They say that many times, the food doesn't come out right (something about the fat dripping on the fire and spoiling the taste, if I understand em correctly).

I suppose you could get one of those offset diffusers that camp the coals on the side (some even have water trays). Problem is, by the time you buy something like this, you may as well have just bought the offset.

Now, I gotta say (and don't groan folks)... my Bradley is a machine. I am so impressed with it. I can smoke for 8 continous hours (overnight). Yours is much like the Bradley.

I told my wife last night, my new saying was:

"If you don't smoke in a mini-fridge, you ain't chit" :wink:

I guess I don't understand. Both the UDS and offset are both grills and smokers. From what I've heard, the offset is superior in that the heat source is away from the food (on the side) and because the heat source is on the side you don't lose as much heat when you add wood or charcoal.

I know I need a bigger smoker since the meats I'm getting is actually too big for my lil masterbuilt.


I would even consider the Bradly smoker from what I've heard about them.

Well, I'll say this: I'm glad I bought my Bradley. It's truly a machine, and I now know why so many swear by it.

But I too, want another option. I have a Vermont Casting's grill (propane) that actually has a rotissiere. I was thinking of adding one of those Bradley smoke injectors, but they're like, $160.00. So I may just use the pan smoke method with it.

I've got a Mitsubishi 55 in projection TV that I was going to give away, but the kid (he was in my son's rock band) who was going to take it got kicked out of his Mom's house, and moved down south. So, the wife says that if I sell it, I can use the money toward an off-set type grill (the TV is like new, and I think I can get $400.00 for it).

So, I'm lookin at a Lyfe-Tyme or similiar. I've got the "gotta collect grills" bug too. Think I'm gonna get an offset type.

By the way It's probably going to be the bradly or the char grill smoker.

If someone tell's me the char grill smoker unit can do big cuts of meat & smokes a mean cut of meat, I might seriously consider purchasing it.

I was gonna Craigs List it. Had good luck selling my hot tub.

A Bradley? Isn't that quite similiar to your Masterbuilt? Why 2? Or are you getting rid of the Masterbuilt?

Like I've said in other threads I'm torn on what to get, I want the smoker big enough to do lots of meats, and I need to work right!

Look at sq inches of the grill/rack space when making your choice.
I used to do commercial photography and we did all sorts of things to make an item look bigger or smaller depending on what we wanted the customer to think.

I may have taken what you were after to the extreme, I've been using an offset from wally world for 4 years and last year built an oversized UDS as an off set.

With a little horse trading and some scrounging, $27. 38 in parts plus some welding rod.

Cooked 12 racks o ribs & 50 lbs of chicken and now have added some more racks, in case.

I do encourage you to take the barrels and design an offset you like, with the 3 barrels I'm thinking you could use two as chambers and one as your offset heat/grill. just a thought.

Just did my first smoke in the Bradley:

Did chicken: used this 11 herb & spices mix.

Washed the chicken & dryed it. Put several tblsp of the stuff in a plastic bag and shook and dusted the chicken with it, then smoked it with the applewood pucks/biscuits about 1 hr 45 min/ pulled it at 151 degress and foiled and stored it in the oven.


WOW!

Moist, amazing, and flavorful. The wife felt the 11 H&S was too salty, but loved how the meat came out.

I loved it, and would do it just this way again, but leaving her pieces plain smoked.

Gotta wonder if a UDS or offset can match this?

I've decided I'm saving my money for a char coal wsm or a BGE not sure which one yet.. I'm leaning over towards the wsm!
