Hey all you strangers, I have been busy with midterms and other things, one of the other things is why i am posting today. About a month ago i decided to try out for Culinary federation of America competition. this is other schools and restaurants competing for money and such. So last month i competed against fellow students for one of the two spots open for our school. so out of 18 students tried out i made of the two spots. now not only am i going against everyone else but a good friend Gabriella who is my enemy for this and fellow student.

Well my money and application and all is heading in the mail tomorrow morning. Comp is on April 18th. i must make 5 plates 4 for judges and 1 that is aspic'd ( jelled ) on top of that i have to cook enough for 200 guests. i get 1 server and wow that's alot.

My dish is Ancho encrusted Pork tenderloin with a ancho, cherry, bourbon sauce. i have to include a starch and veggie and yes will be a alot of pictures for this. So if anyone is out this way stop by riverside casino. if not just cross your fingers.

Good for you Bill, sounds like training is doing well!!
I was going to suggest smoking up some Foie Gras and pan searing but went back and noticed you were serving 200, YIKES!! That would be a budget buster...

Good luck! While I was at Culinary School I also did alot of competitions. I even went to Germany to compete in the Culinary Olympics back in 2000. I got a Silver medal. It is fun but very intense. I would suggest practicing as much as you can. Then practice more!
