I do not use any wood with bark on it...{or try not to} What is the general opinion? ... Do you believe it gives a bitter flavor to the meat...?

I never remove the bark...unless it's moldy or otherwise rotten.

depends solely on the equipment.... the larger the pit the more forgiving.

As long it is not moldy I use it with bark. Now I will admit if I have barkless pieces I use them when I first fire up the pit, but I don't really think it matters.

Depends on the pit and how easy it is to burn a clean fire, I guess. With smaller cookers like I use, I leave the thin fruitwood bark on, but try to knock the thick stuff off the hickory, as it will tend to smolder much more with the bark on. I also try to get rid of any moldy bark, but really, I'm not going to go to too much trouble.

The bark gets removed if it's got any sort of growth on it, otherwise it goes up the chimney with the wood.

Interesting... I thought that there would be a 50/50 split on this one...
I only remove bark if it is excessively thick or if it has mold or mossy growth - and if it can be removed easily - If I have to set my beer down, I'm working too hard.

i doubt it matters if you pre-burn it and just put coals in the fire. if im just putting wood right in the smoker, i pull off the bark. less creosote without it.
