Just watched Tony Bourdain on No Reservations eat some whole hog off a spit in Puerto Rico and it looked awesome. There were two hogs on spits in a restaurant and the meat was sliced (hacked) off with a mini machete. Crispy skin and tender meat with a flavor described as perfect. He said he wanted to go the same way, massaged with seasoning and roasted whole over an open fire.

I saw that one too. I grew up in PR and I remember driving down country roads past little food stands with fresh roasted chicken and pork. The aromas that those stands gave off . . .
I'm telling you, watching that show brought back memories.
Over the holidays, Puertoricans prepare and eat roast suckling pig - "lechon asado". It is a national dish and it is to die for, any time of the year. There's a running joke in the island that you can drive the price of your house up if, instead of building a pool in the yard, you build a pig roasting pit.
Andrew Zimmern also shot a show in PR. I could watch that show over and over.
I need to get back there to visit!

I love Tony and have read most of his books. It seems I missed this episode and need to keep an eye out for it. Just thinking about that whole hog is making me hungry.
