Well brethren, after a lot of thread reading here I did some baby backs on the new UDS last weekend.
I used a brown sugar based rub then the Trigg method 2-2-1 at 225.
The 2 in the top of the pic were basted with Sweet Baby Rays and the bottom one was not basted at all.
They came out pretty dang good I think.
The family loved 'em and they want me to smoke 'em again next weekend.
The UDS ROCKS :thumb:...

Woohoo! Good lookin' ribs! I'd hit that, hard. I built a UDS for a co-worker, and his wife is so hooked on ribs, he hasn't been able to try anything else! Have fun!

How do your ribs survive 2hrs in the foil? Any more than 40min and they're too mushy on my drum. Just my opinion.

Capt Dave,
I don't know, I guess because they floated between 200 and 225?
They certainly were'nt mushy, they pulled away easily from the bone right at the bite and left nice bite marks. the meat didn't just fall off the bone.

How should the texture be?

Here she is...
It still has the flat lid on it but I intend to put a dome on it.

The ribs look great, the UDS looks awesome! loe the stainless...was it a "find" or did you buy somewhere? I am assembling parts for my first UDS - just got an unlined barrel yesterday!!

It's not a find.
There is a recycled drum dealer in Knoxville, they had about 20 of them for 50 bux each. (They also had 85 gal. and 100 gal. drums).
They are closed end and you have to cut the top out. They are not perfect, they have small dents in them but not to hard to work out with a hammer and dolly. Well worth the 50 bux in my opinion.
This one should last me forever.
