View Full Version : Foil Pan for Brisket?

Do you guys smoke brisket in a pan or out? I've seen both ways, didn't know if there was a difference or why some would use a pan.

I usually use a pan. I think it is easier and more forgiving. The liquid that collects in the pan will buffer the heat and help keep the meat moist. It's similar to wrapping in foil. If you don't have a lot of experience this is probably easiest.

Look up Barbefunkaramaque's threads on how to do a brisket with out wrapping. He's got some good pointers.

I like the foil pan because it makes it easy to foil the top to help tenderize the meat and let it braise a little.
