View Full Version : PIZZA in my UDS

I have wanted try Pizza's in my UDS and finally got to.
Our Daughter had a couple of her friends spending the night so I thought, hey let’s make Pizza's. We loaded up and headed to Publix grocery store and got sauce and all the fixin's and got Pizza dough made fresh from the deli. My wife and the three girls loved making their own creations and was lot of fun. We made a total of 10 size pizzas.

Average sizes were 7 to 8 inch’s round.
Starting Cooking temp was 500+/-.
Cook times 5-10 minutes depending on amount of toppings.
Temps dropped some and times increased because of lid being opened and closed due to adding and removing pizzas.

All in all i was very much satisfied with the outcome and we will be doing more of this.
Oh, and there were no leftovers. That left a good feeling for my first ever try at pizzas and in the UDS at that.:-D
Hope you enjoy the PRON as much as we enjoyed eating them.....

Very cool!!, Good looking pies too!! What did you use to put your (I assume it is a) pizza stone on in the drum?

I put the Pizza Stone right on the top grate, then heated the drum up to 500+deg and started cooking.

Looking at your spacing between the two inlets you can see in that one picture, was wondering...do you have 4 inlets? are they 3/4"?
I would think it would be hard to keep temps up that high and keep them constant with all that lid action going on.
I've never done one on my drums, but do it on my Weber Performer with great success.

BTW...what did your daughter think of you taking pictures of the pizzas with her friends around? My daughter won't let me :loco: ( I love the new emoticons)

Lookin good, lots of toppings.
If you want to try for a thinner/larger crust with the Publix dough balls, let them rise/rest covered in EVOO for 3 hours in a bowl covered with kitchen towel. It will roll out MUCH easier without springing back. It makes all the difference in the world IMHO.

Great looking pizzas. Gonna have to try that on mine. Ive never tried to hold 500 but I have spiked them up there just to see if I could. :icon_cool

All 4 inlets are space evenly apart. Yes, they are 3/4".
I kept all 3 uncapped and the the ball valve wide open to try and keep maximum heat. I was able to keep the temp from 300 to 400 depending on how much i opened the lid.
The first couple of times i tooks pictures like of the first Boston Butts and Chicken i did, She thought i was making a Recipe book or something. I showed her the website and now she thinks it cool.

Thanks for tip. My wife & kids like thin crust but i like thick. So i'll remember this for mine the next time.

Just make sure you put enough charcoal in your fire basket. Open all anlets and put your pizza stone in and get the temp up to 500 deg or higher and there should be enough coals to last through the cook. I had about 8 pounds of charcoal and lastest about 2 hours and we cooked 10 pizzas. The temp will drop because the pizzas cook fast and the lid will be opened or taken off alot to get the pizzas on or off.

I did a papa murphys in my weber kettle. You can't beat the taste the charcoal gives it!!!
