View Full Version : Bake & Smoked Bacon Wrapped Spuds
Had to give the latest craze a try for our annual Celtic Fest Saturday night. Baked some Idaho taters then removed the insides to mash with butter, colbyJack, and a little Half & Half. Filled the skins back up then wrapped in bacon and onto the smoker till the bacon was done. I precooked the bacon a little so the taters wouldn't dry out. Sorry I don't have pics of the finished product but they were such a hit, they disappeared from the platter before I could get the camera out! Topped them off with some John Henry wild cherry chipolte rub. That really added to the flavor.

I baked them at 400 for about 45 minutes.
