De-boned some Thighs and stuffed a few. Tried cooking the others De-boned and skinless, rolled and tied.

Used skins from 2 Thighs to wrap the stuffed one and put into cupcake pan.

Looks heavenly! I've been thinking about stuffed ones in a muffin tin also. What's the verdict?

Thanks!

They are a PIA to prep, need to watch them real close as Be-boned and in the Tin really speed up the cooking times. As far as the others I prefer skin on, it protects the meat, they may be better in the Tin with the butter added to keep moist.

Forgot to add the sauce Pic, finely chopped Onions and Mushrooms sauteed in butter and added to a can of Cream of Chicken soup mix with no water added.

Is that a stuffed green chile with a bacon wrap? Everything really looks good, but my mouth is watering over the relleno... if that is what it is.

Thanks!

John
