We have not ever been the closest of siblings, we have all gone our own way in life, scattered, literally, all over the country. Our youngest brother, Bill, moved from CA to FL just about 30 years ago, he and I have not seen each other since. Well, to make a long story short, my truck driving little brother showed up here yesterday morning. Have had a great time visiting and catching up. Oh yeah, and eating! Today we two fat brothers made our way through 3 racks of Baby Backs and I have a fatty put aside for breakfast.
The ribs I bought at RD at 2.32 a pound. I gave them a heavy rub of Big Brother Smoke's Simply Marvelous Sweet and Spicy Rub, and let them sit in fridge saran wrapped for about 8 hours before I put them in the WSM at 235 with pistachio and hickory (a great combo.) I went for Memphis style, I really do prefer the dry ribs. The Simply Marvelous really is just that on ribs!
The fatty was JD Sage, a heavy layer of minced garlic, decoratively placed pepperjack cheese pieces and diced onion. A nice bacon weave finished the project. This came out nice, and breakfast will be the bomb tomorrow. The ribs were great today! Thanks for stopping in...
