Those are actually industrial grade agricultural beef flavor enhancement cubes.
We feed them to our free-range veal, starting about two weeks prior to slaughter.

I use oak whiskey barrel for everything and am very pleased with it. I literally cut apart a 100 lb whiskey barrel into hunks. I think you will like it. How did she come across them at the winery?

She has a friend at a local winery. We get used oak wine barrels also, although the next batch won't be made into planters...

Man, I haven't been out to Livermore in years.
It's still the same. Lab rats, cowboys, crackers, and a few others to even out the mix.
What am I saying...come to Livermore if you want to live-no-more? haha

They have to dry out some more, they were fresh from the wine bin. I figure there's 20 pounds here, might have to try them with some salmon. Maybe a yard bird, brisky too.

We're trying out 2 cups of these chunks for a Tri-Tip reverse sear tonight. Wifey says "these are French oak, medium toast".
The smell of the smoke is wonderful and fabulous, fruity yet bold.

Pricey stuff. The wine dude only uses these maybe once a year for one special batch. Shucks.:-D
