Ok so I smoke a tri tip yesterday, sorry no pron, wifes out of town with the camera again. anyway i want to slice up whats left and make some roast beef sandwichs with au jus. The local brewery here does it with beer.
Anyone have a good recipe?

recipe for? Au jus? I use drippings, water, butter and a bit of roostershire. If you dont have any drippings you can use a hearty beef base. Use the beer in place of the water and reduce.

Sorry, didn't make myself clear. what i want to do is cook/reheat the remaining tri tip in a crockpot for roast beef sandwichs. I want to be able to use the liquid for au jus.

I made up this topping for an open faced roast beef sandwich I made last month. It worked out VERY good except for the fact I tried also topping the sandwich with a swiss cheese sauce. Both were good but they were better using one or the other, not together.

It has a nice kick to it but is mild enough for most folks.
Horseradish Gravy
2 Tbsp butter
2 Tbsp flour
1 1/2 cups beef stock
1 tsp black pepper
1/2 tsp kosher salt
1 tsp prepared horseradish
Melt the butter over medium high heat. Whisk in the flour and continuously whisk until you get a dark roux.
Whisk in the beef stock. I'm guessing about the amount but just slowly add beef stock while whisking. At first the mixture will thicken, get clumpy, and make you think you screwed up. Keep adding broth and keep whisking and it will start to smooth out into a gravy.
Once you have it at the consistency that you want, whisk in the salt, pepper, and horseradish. Taste and re-season according to your preference and heat tolerance. I ended up taking mine to 2 tsp of horseradish.
