I finished 4 lbs of pig candy and have 5 briskets and a corned beef on right now. About to put on 10 butts and brine 10 lbs. of chicken.

Just finished prepping two family packs of chicken thighs (20) for a practice comp cook. Have a pound of bacon dusted up with John Henry's Texas Pig Rub and brown sugar, one rack of St. Louis Spares dusted up with some Willingham's Wham seasoning. Water soaking 3 Corned Beef points for Pastrami, and I'll probably hold off until tomorrow to trim up a 9lb Choice brisket for a hot n' fast cook!
Oh yeah- I work the graveyard shift so I'm a night owl!

After dropping free-bees off at my local sports bar ( shumai and Viet eggrolls) I got home and prepped for the kebab throw down. Doing kebabs three ways. Got that need to feed, and I love to do it, but it’s get’s expensive giving it away. (that’s what she said):yo::wink:

Just got home from my side job, got 7 lbs of pork loins curing for Canadian bacon and 2 slabs of brisket in the brine for corned beef, then on to make pastrami, a snack, glass of wine. Off to bed.

Did a spaghetti dinner for 50 people last night. It was a charity event for the Florida Outreach Center for the Blind. :-P
I call myself Chef Jim, but I use that term very loosely :-P I have never cooked in a large kitchen, let alone for 50 + hungry people. Started the sauce at 2:45 for 5:30 start.
And as we all know, no good deed goes un-punished! Bill my helper and the guy that usually does all the cooking buy himself is blind. Now he did real good getting all the stuff, and I supplied the meat.
Well we get to the salad part and he brings me a bag and asked if he got the right stuff. It was Cabbage :rolleyes: So off I go to Publix for some lettuce.
Now this never happens to me but this cute girl starts to hit on me in the checkout line. :-D Of course I got to get back to the kitchen. :crazy:
Ok I'm back and Bill wants the lettuce chopped real small. He explains that it's easier for a blind person to eat that way, so I'm choppin away and brings another bag over and askes if he got cucumbers. Guess what? Zucchini :clap2:
Oh well, in the end it all went over well. My sauce was OK (not my recipe), everyone was well fed, they made a few bucks, and I sold a few cookbooks.(Just Plain Yummy)(http://www.chef-jim.com (http://www.chef-jim.com/))
