I have smoked chicken with corn cobs many times on the BGEs as well as the WSM. Cobs produce a very light smoke that makes the chicken taste more robust without imparting a smoke flavor. The chicken just ends up being more hardy tasting sorta like turkey tastes more hardy than chicken. Hard to describe.
This is the first time on the UDS however, so the dripping into the coals will surely change the flavor profile.
Cob smoked hams and turkey are very popular here in Vermont from such places as Harrington's.

Grilling with corn cobbs is an old practice in many poorer parts of the world where char coal is in short supply. Original "cobb" grills were traditionally small clay pots that were easy to transport and required little fuel to heat up. The new Cobb Grill is a take-off of this idea as it is small and uses little fuel.

Good stuff! Never would've considered a corn cob for smoking but those birds look mighty fine!

This was very tasty. I couldn't tell any difference in taste from the ones I have cooked on the BGEs or WSM though.
