The title is for all ya'll in the pork chop throwdown thread that were teasing me earlier.
Finally used my 15.00 CL score. It's a Sunbeam...and it CRANKS the heat. Got to 500 in NO time what so ever.
I thought we would switch it out and throw a Weber kettle in it since the table is so nice...But I think I actually like it just the way it is. But we'll have to see.
On to my little cook.....Butterflied Chops..AKA...Pork Nuggets stuffed with goat cheese, carmalized onions and red peppers. I made some homemade sweet potato drop biscuits and peas to go along for the ride. Jack really only ate the biscuit and the nugget filling though.....Which I find peculiar for a 3 year old but I'll take what I can get.
I'm not happy with how my PRON turned out...it tasted MUCH better than it looks.:icon_smil

Dang, I came here expecting something else, Shawn has caught on fast...good looking chops there. I find that creative camera angles rarely work for me with food.

Great looking meal! Do ya just add some mashed sweet potato to regular drop biscuit dough? Momma loves sweet potato in any form.
It's just a basic drop biscuit recipe using self rising flour. I added a tbsp of sugar (maybe a smidge more) and used butter instead of shortening, I also added 2 small (or one large) baked sweet potatos that I mashed up. Baked at 375 for 15-20 minutes.
My mother in law uses Jiffy biscuit mix and they turn out great as well.
