It's the mother-in-laws bday, so I'll probably be doing up a case of spares and have some family over Sunday.

I'm in for a treat this weekend. My buddy Alisa's son and his cousin are butchering
Hogs today and I'm getting a rack of Ribs and some sausage from them. Looking forward to Smoking them with Cherry and Hickory, along with some Chix Thighs and Drumsticks...will post pron later on.....

Jean just pulled a butt, a CAB brisket, and three racks of spares out of the freezer. The 'Dera's going to get a work out!

Yep I'm back and going "whole hog"!!!!!!!!!!

Almost forgot! Pheasant sent me some YUMMY horseradish brat sauce...can't wait to try that!

Friday night - Rack of lamb. Still trying to decide what wood to use, but leaning towards Cherry or Pecan.

Saturday, A rolled Pork loin stuffed with sundried tomatoes, olives, cheese stuffed peppers, serrano ham and fresh herbs from the garden. Got the idea for that here:

50 degrees outside is predicted for my town this Sunday. 50 degrees! Now, that's some gooood smokin' weather for February. I will be smoking some ABTs, ribs, and some chicken.

I've got a hunk of standing rib roast that I'm going to cut into ribeye's for tonight, tomorrow I'll be cooking some chicken thighs that I plan to use in some Brunswick Stew next week, and Sunday I'll do a couple of butts and some spares - can't wait!

I have a butt in smoker right now, internal temp 165F. Started smoker last night at 10:45pm, threw butt in at 11:30pm still cooking!

Firing up the Santa Maria for some tri tips...Doing a dry run for a big gathering next weekend. Might do some Santa Maria Beans as well. Saturday, over to a friends to watch him fire up his gas grill for a beer can chicken...not sure about Sunday yet.

The plan is do to Tri-tip on the Weber Performer tonight and Saturday to get the COS started for my first brisket. Well, it's just the flat actually, not a whole packer.

Doing a 17lb Chuck Roll. Not sure how yet, Was thinking about just Salt & Pepper but now im thinking about injecting with Butcher. Anyone done butcher on a chuck roll?

Friday noon and my garage and driveway are a cluster-fark.
I'm in the middle of building 4 UDS at one time, I don't know how far things will get today, so might have to settle for firing up the old Char-griller and making some burgers.

I know, I know... Burgers? I want to test some Stubb's briquettes for grilling qualities anyways.

Flash on, flash off, medium rare burgers and right back to UDS building for me.

Pulled my first brisket off yeserday morning and have been eating it relenlessly! At the sore today I kept gong back to the Jimmy Dean rack wanting to make a fatty, but had to pass knowing I was next going to the meat store. I ended up with a double butt, and learned they can order any type brisket and have it the next day. Whole, half, anges, choice, etc. What is the best brisket? I'd like to compare prices. I got the choice butts at 1.49 LB., a bit more thzt the box store, but they have always been much better here.

10.51 pound Myers-Natural Angus Packer...Injected it w/ Butchers BBQ...gonna rub her down w/ Dizzy Pig Cow Lick and Jim Balridges Secret Seasoning in the morning before I put her on...Pecan is the wood of choice 2morrow!!! :-)

ABT's on Saturday along with piggles never tried the piggles before but we will see along with some ribs. Sunday its roadside chicken and asparagus.......

I thought I smoked a brisket but lordy I swear it was a boot. It was from the half beef we bought this summer. They trimmed the snot out of the thing, I have seen more fat on a fillet Mignon. Not worth much but hopefully will make a good pot of Chili.
