Deer:backstrap

Beef: get a Small flank steak lots of marble and a small brisket. Try them both they have totally different textures but incredible flavor. You decide.

London broil is a good piece for jerky.

Depending on your butcher and whatever grocery store you use, London broil is commonly a label put on flank, flat iron, shoulder blade meat, and sometimes but rarely very small brisket. this was what was explained to me. But ask your butcher. Any grocer that doesn't have a butcher to explain his cuts, or give advice on jerky shouldn't be patroned.

I like flank the best, but I use eye of round because it's cheaper

Lying in bed last night my wife asked me to make her some jerky today, and it occured to me that Winn-Dixie lables thick Top Round as London Broil.

Ideally flank steak. Flat iron is okay but harder to find.

I use mostly top round. have used eye of round as well. partially freeze to help you get uniform thick slices. you want really lean meat, fat does not dry/dehydrate very well.

top round or london broil sliced with the grain (will fall apart too easily if you slice against the grain). You want something very lean with little to no fat in it

I prefer venison tenderloin, but if I don't have any on hand, I get the leanest flank steak or london broil cut I can find.

I have been using top round on mine lately. I have used london broil also. The top round I got was uniform thickness and made it easy to slice.

Lots of good advise here. Just remember to get the leanest you can find and cut out the fat that you can. Fat turns rancid in jerky.

I have never used top round before but from the pics posted up here so far, I will have to try.

I normally use an eye of round because of the price and availability (as mentioned before.) I find it the easiest meat to slice with the grain.

Ahhh, just googled it and apparently it can be flank steak or round steak.
