Got a question. About to put a boston butt on have been doing them fat side up is this the best way or backwards or really doesn't matter???

Yeah I have been doing them that way and seems always turns out great but was just wondering... thanks for the input

Best answer you will get it to try both and then decide for yourself which you prefer. Experimenting on your own is 1/2 the fun.
Everyone will have a different opinion as it's a mix of personal preference, the design of the smoker you are using, the rubs used, the temps etc.

Last (and first) ones I did Fat side up then flipped at the second half way mark.

This is a classic bbq discussion. I like my butts with with the fat down. If one kept stats on this I am sure we would find it made no difference. There are equally compelling arguments on both sides of the butt. lol.

If you have a hot fire under it, I'd put the fat down.

I trim my butts up pretty good when I'm cooking in the drum as there is plenty of fat on the inside to keep it moist.
Brisket I will put the fat cap down to act as a heat shield.

Trim the fat, grind it up, render it to liquid, and inject it.
Just kidding. I do fat cap on the side, bone down, to heat the meat a bit faster.

I have never thought of injecting rendered fat, it goes to show that there is always another way.

Did a 5 lb. butt last night. For the first time, I trimmed all the fat off the outside. Have to say, it was the best so far.
