This was only a select brisket as i wanted to try to get tenderness and flavor from cheaper meat. All in all i was happy. Its definitely not a choice or better piece but if i was serving this to company they wouldnt know the differene, sadly i did, but was good.

is ur thermometer in a potato to keep it off the grill? pron looks great! what kinda rub u usin? i did some beef back ribs tonight, they were good i need a camera to document my work on here lol

I use whatever fruit or veggie that holds up to long smokes to hold the thermometer off the grate. Sorry to answer your question, yes that is exactly why. Id like to get a new thermo soon, or at least a new pen thermo.

Beef backs are okay, but short ribs(or dino ribs) are the best. Either way, i love eating off the bone. So much flavor that close to the bone. Camera, pics, hungry.

I use a small chunk of cherry that I drilled a hole through. And wrap the probe where the cable meets to extend cable life.
Nice lookin brisket. Any sliced pics?
looks awsome, wish mine looked that good. I still need practice.

I like to use a Vadalia onion for the probe, switch to a new onion about half way through and then use the smoked onions in my Beans.
