View Full Version : Amazing, Heaping, Enchilada Plate!

Mrs Leanza worked some magic tonight. I can't hardly see those fantastic chicken enchi's under all those lovely adornments. I guarantee you they are there. But that's how I like it! Big mouthfulls of chicken, melted jack and chedder cheese, spicey salsa and quacamole. Awesome! Fresh tortilla's and beans, rice and sour cream on the side....Heaven on earth. Somebody wake me up!

Looked at that plate twice & am going back for thirds. How about the enchilada recipe?

Courtesy of Mrs Leanza.

3 boneless skinless chicken breasts or
store bought ready rostis chicken
2 28oz cans of green enchilada sauce.
2 1/2 cups of sharp cheddar and 2 1/2 cups monterey jack.
15 or so corn tortilla's

1/2 onion chopped
1 whole bell pepper chopped
3-4 jalapenos, chopped
clove of garlic minced.
saute the above ingredients in oil.

Cut chicken in sm to med pieces and saute in oil. Cool. Then shred meat. Mix chicken and sauteed vegs in with a 1/2 can of green enchilada sauce, into a storage container (ziploc) and chill for hour minimum, as to let flavors come together.

Then warm 1 1/2 can of enchilada sauce. You can put it in lg bowl and warm in microwave. Cut tortillas in half, dip in sauce and layer tortillas, chicken mixture and cheese in 9x13 pan. Layer ingredients again. Add one more layer of tortillas and pour enchilada sauce over ingredients. Top with cheese. You don't need to use all the enchilada sauce.

Bake 30 min @ 350 degrees.

About fifteen corn tortilla's. She cuts them to size at the edges.

Man that is some good looking food there, I wish my wife could cook like that. She didn't know when cutting onions that the outer layer of skin doesn't go in the food.

I think if you look at that recipe and consider it's served by the square. It would be moderate in calories as compared to alot of what we serve around here.:-D

My, my that looks yummy!! I'd hit a plate just like yours. Reminds me of my Mom's green chile casserole. Pretty much everything you used with the addition of a can of cream of mushroom soup and tortilla chips. I can eat that stuff for days!!!

You hit it...It is more of a casserole. A more traditional dish would have indivudal rolled enchi's. This is a layered dish much like lasagna.

You hit it...It is more of a casserole. A more traditional dish would have indivudal rolled enchi's. This is a layered dish much like lasagna.

Your plate looks fantastic. It is even better the next day and the next after the flavors blend together and the tortillas get fully soaked. I prefer this method to actual rolled ones. Even when we make enchiladas, I stack em like pancakes instead of rolling. The flavors mix better and the rolled ones not only take more time to make, but they don't reheat as well. Please let Mrs. Leanza know that she rocked those enchiladas!!
