View Full Version : What is your Menu for a Classic BBQ party?

Now that i have a couple days under my belt smoking with my "new" UDS - I freakin' LOVE it. I'm addicted, so now I'm planning a party that I think could reaccur many times throughout the year. I have a big immediate family, 15-20, and we usually get together for family events and Seahawks partys; I need another reason to party - so let's do a BBQ!
So here it is - I need advice on what my menu would be for a Classic BBQ! It can be anything. I'm hoping for some good ideas, but mostly it'll be cool to see the diversity of the brethren. Main courses, and good sides. Drinks even, if you have recommendations. :icon_clown

2. Beer (Im not picky. There are only two kinds of beer, free and cold)
3. Baked Beans
4. Guests usually bring a wide variety of sides
5. ABT's are the greatest invention ever. EVER.

Ok, seriously:

1. Pulled Pork (butts)
2. Ribs
3. Sausage
4. Buns for them to make sandwich if they so choose
5. Condiments for above
6. Baked Beans
7. Cole Slaw
8. Tater chips
9. COLD BEER

Not necessarily in the order presented....

"Classic Menu"...:cool:

Carolina style pulled pork sammies...(slaw on top with Carolina Red sauce)...
Texas style beef brisket...(sauce on the side)...
Memphis/St. Louis style ribs...(sauce on the side for Memphis...sweet & sticky for St. Loius)...
BBQ beans...
Cole slaw...
Corn bread...
Greens...
Beer...

Ribs, Brisket, Chicken, Potato Salad, Baked Beans. A smathering of various unique brews is always around as well as some Rum & Ginger.

Ah yes, Pretzels, Chips and Dip, and Cheesy Poofs.

Ribs, (dry rubbed.. sauce on the side)
Chicken
Brisket
Corn on the cob
Jalepeno cornbread
Fresh made pico de gallo
tater salad and slaw

And for those that venture into the pit area to inspect things,
ABTs, Fattys, Biscuits, hot links. (<-- dont visit the pit, u loose..:twisted:)

It warms my heart to see all you boys approving of the Carolina style of pork BBQ. The Eastern style (vinegar and no red sauce) is what I usually eat in my area, but I like the red sauce-based (sometimes referred to Lexington-style) BBQ just fine as well.

I finished my UDS build over the Christmas holidays but haven't had a chance to cook anything on it yet. The menu recommendations on this thread may have provided the motivation. I wholeheartedly approve of all these choices.:-D

I love my UDS also...Mine is about 1 month or so old...GReatest thing that ever happened to me. I need a Weber Lid, that being said, If iwere having 15 or 20 people over...
1. Pulled pork Sandwiches, so you need Cole Slaw
2. Pork Ribs, they would Q over the Butt
3. Tuna Nuts ( Tuna, a little onion, a little garlic wrapped in Bacon)
4. Have the Wife make up a salad...a good green salad with nuts, maybe cranberries and a homemade salad dressing
5. Fried chicken on my bayou classic. I use that southern lady, Paula something...her recipe.
6. Some corn bread, maybe with some Jalepenos in it
7. beer

I can agree with all the above. I would add to "classic" hot dogs and cheese burgers. Nothing says classic as a good cheese burger on the grill.:-D

Having said all that crap, I think beans, slaw & tater salad usually make it to every BBQ cookout that I've ever been to.

We usually have a barbecue each fall and invite lots of friends and even musician-friends to help with the post-dinner campfire ambiance. The crowd varies between 25 and 75 folks. Usually we have anywhere between 10 and 20 camp out on our place and wake up hungry.

Typical fare we provide:
Briskets (this is Texas, after all!) and sauce on the side
Pork Butts (not pulled, sliced at 190 degrees) and a different sauce on the side
Sausage (polish, hot links and venison)
Chicken
Pinto Beans (with bacon & onions)
white sliced bread
pickles
vinagered onions

Guests are encouraged to bring sides & desserts.

The next morning, we set out a cowboy breakfast cooked over the fire:
eggs
chorizo
BBB
chopped brisket
tortillas
biscuits
Pace picante sauce
pico de gallo
hot sauce
fruit

An authentic bbq around my house would involve too many people for the space we have, kids fighting and crying, the women in the kitchen chatting it up over wine, burned hamburgers, dogs yelping from being stepped on and at least one dropped beer on the concrete. But its always fun.

You want real authentic... dig a pit in the ground and cook a whole hog.

We have a lot of BBQ parties. The last one was a combination family reunion and my wife's 50th (don't mention I told that:rolleyes:) birthday on Aug 1st last year.

We cooked

1 brisket
2 pork butts, chunked, sauced with buns
10 half chickens
3 racks of st louis spares
15# grilled sausage
40 hot dogs for the kiddies
1 full pan of potato salad
2 full pans of baked beans
1 half pan of coleslaw
lots of chips, pickles, pepperocini etc
lots of beer:biggrin:
lots of iced tea
2 full pans of banana pudding
1 big azz birthday cake

Had about 30 people at a state park in Arkansas and the food was all gone except for 1 half chicken and a couple of hot dogs in about 3 hours and next time I've been told to make more coleslaw since it got wiped out quick and some folks didn't get any.

Awesome thread! What a great idea getter!

Appetizer - softened block of cream cheese with a jar of warmed Texas Pepper Jelly poured over the top served with tortilla chips.

Some combination of, smoked brisket, pork spare ribs, chicken halves
and V&V jalapeno sausage and sometimes all of it depending how many folks we're having over.

Sides -
Skillet Baked Cornbread
Crock Pot Pinto Beans (Charro style)
Fresh Cantaloupe slices or fresh fruit salad
Pan Fried Okra
Green beans smothered in tomatoes
Buckhorn pickles
Iced Tea/soda/beer/bourbon
Blue Bell ice cream (sometimes I make homemade ice cream too)

For Pork: Pulled Pork or Ribs (If doing ribs, do both spares & baby backs)
Brisket
Chicken (No muffin tins)

Sides:
Potato Salad
Cole Slaw
Mac and Cheese
Beans
Corn Bread

Dessert:
Bread Pudding
Apple & Cherry Pie
Vanilla Ice Cream (to go with the bread pudding & pies)

Adult Beverage:
Bourbon or Tennessee Whiskey
Beer

Other Beverages:
Lemonade
Sweet Iced Tea
Coffee (To wake up after consuming all the above)

Do you mean you'd ADD sausage??? I think I would...:cool: We're just not big sausage eaters around here...:icon_blush: That said we'll be making up about 15lbs this Friday...go figure...:lol::lol::lol:

Memorial day is my big Q-day. Menu consists of:

6 slabs spare ribs
15-20lbs of chicken parts
10-15lbs of catfish
5 lbs hot links
3 ribeyes
hamburgers
sweet baked beans
spaghetti
coleslaw
potato salad
Carmel cake, pound cake, apple pie and a gallon of good vanilla ice cream

Thanks to all of the knowledge I have picked up lurking on this site for a year, this year I will add a pork shoulder, beef brisket, fatty and some ABT's.

I cant believe only two people include burgers in their BBQ list!!! I always grill some up for the kids but it is us adults who end up eating them around the fire or the poker table late into the night!

BURGERS are a must for every BBQ!

You need to cook up more of the other stuff listed and enjoy that between poker hands!

Although a good bacon cheese burger with some carmelized (1.5 hour) onions is a nice snack.
