It has fallen to me to do ribs and tri-tip on Christmas. But, I am using my brother's stock kettle and not my modified tuned super familiar kettle. I am also using Royal Oak briquettes instead of the lump I am used to. I can't get the temps to settle down. Apparently, at least for now, I am no pitmaster.

i dont buy that, just give it time to settle in, make the necessary adjustments and then rock on!

Exactly right.... it will most likely work itself out.

And just in case, I've been known to go to the foil when cooking on a strange cooker that is running hot. I'll use it as a heat shield, a tent or even a boat.

okay, got it going at 231F exactly for the past 4 hours. I forgot I had tri-tips on there, so they were pulled at dead medium, but, since they were smoked, I am hoping they turn out good. Now where is the camera?

I made a few mods to Bro's kettle, since none involved a hammer, I figure I am okay.
