View Full Version : Rolled chicken breast in the UDS

Cooked up some rolled chicken breast yesterday for my youngest's 2nd birthday party. It was my first attempt at brining and I must say how impressed I am at how moist the chicken turned out from the brining.

Smoked with hickory as it is about all I can find atm, but hoping to get hold of some apple. These would have been great with cranberry sauce if I had had any about, and the brine needed to be a bit saltier, as I had backed off on the recipe I used as it was the first attempt and it was for a live audience!

Here are some pics of the stuff cooking in the UDS, and being served.

The rolled chicken had prosciutto, cream cheese and dried tomatoes in it, while the drumsticks were rubbed with sweet paprika. The rolled chicken was cooked for aobut 90 minutes till an internal temperature of 165, while the drumsticks took a touch longer but also came out beautifully.

Easy to do and very tasty, there were none left at all, 6kgs of chicken breast and legs gone through!
