Since the in-laws cooked for Thanksgiving, I'm smoking my turkey today. :cool:

I put it in a modified version of Patiodaddio's perfect turkey brine (I didn't want it too perfect) yesterday. Actually, I didn't have any 5 Flavor powder, so I substituted some DP Tsunami Spin. I didn't have Old Bay, so I used Todd's Crabby dirt. I didn't have dark brown sugar, so I had to make my own with sugar and molasses. :shock:

I fired up the egg this morning and added some hickory and pecan wood. I asked the wife if she wanted traditional or bbq turkey, and she said she didn't care. So I rubbed the inside down with some Spicewine Hen & Hog dust, added a few pats of butter, and rubbed the skin with some oil. Then I sat the bird on top of a vertical ceramic turkey roaster filled with beer.

Hopefully it'll turn out to be a decent after-Thanksgiving dinner!
