so here goes with a turkey, 20+# ... dunno exact weight anymore after i cut out spine and so rib bones, but smokin it up take a look!!!

fergot to add what temps and what not, but hovered between 280 and 320ish, from bout 1100 til 1 or so usin trusty ole bluebag, and some mesquite from the back 40, i brought it up to 180 i checked temp in both legs and the boobs. wish i had more meat, cuz there is lots of leftover coals in there...

ok, so this was really just practice as said in the title... i had this turkey in the deep freeze fer a while... didnt remember how long, but didnt think longer than a year... musta been older than that, cuz it tasted horrible on the back end.... the front was nice and smokey and spicy, but had bad taste after that. it was amazingly juicy and the skin was soo tasty....lookin, nice and crizpy with the rub i put on it...but alas, was practice and that's all. :oops: :oops: :oops: :oops:

It looks really good. Practice makes perfect! I have found fresh is always best.

ya that's the way im gonna go now that i know how to do it, but i couldnt see throwin away that turkey.... w/o knowin how to cook it (went freezer cleanin and dscovered it) now my next turkey will come out better for the practice i recieved from this one

Looked good to me too, as per above, it does cook faster semi spatched;
also keep in mind mesquite can sometimes be overpowering on birds.
I try and dial it back a bit with apple or cherry if available.

(but as we all know, practice makes perfect......)

i hope so, and i'll try mesquite next time too, cuz i LOVE mesquite, gotta place out here called chuy's they do 1/4 and 1/2 chickens (grilled however) over mesquite, and it's very strong and i love it soo much, so here's to the next one!!

Love the "top" writing on your firebox,my drums still got some markings and stuph on there.

haha, writin fer assembly purposes, used soapstone...dont git it hot enuff to burn that crap off, oh well when i git to the point of paint.... i'll clean it up otherwise, it add character :-D:shock:;)
