Got 4 Boston Butts in the WSM for an all nighter. She is holding a steady 225. Love my WSM.

Tomorrow, Vicki will pull the meat and we will use it to make 80 quarts of Paw Paws Camp Stew for sale.

It is a 3 meat stew with taters, corn, and limas. Tomatoes and Worcestershire..........all the good stuff.

Cant wait. Mmmmmmmmm

That sounds similar to Brunswick Stew.....What is the other two meats? Squirrel and Rabbit?

Paw Paw's 3 Meat Stew

Russet Potatoes
10 lb
Onions
5 lb
V8
46 oz
Whole Kernel Corn
108 oz
Diced Tomatoes
108 oz
Tomato paste
108 oz
Allens Green Limas
108 0z (use half can)
Whole fryer

2 lb chuck roast
2 lb
Boston Butt
4-5 lb
Worcestershire sauce
1 pint
Texas Pete hot sauce
6 oz
Black Pepper
2 oz
Salt
To taste


Smoke the butt.
Boil the other meats.

Boil the taters and onions. When soft, add the meat.
Stir on a slow boil until the meat is "stringing out".
Add the sauces, and other ingredients.
Stir.
Never stop stirring, as the tomato content will make it burn.

Please use a paper quart container. Good stew deserves paper and not foam.

Makes about 30 quarts.
