View Full Version : Brisket Flat on the UDS (pron)

Got a Cryo-packed Brisket Flat at BJ’s the other day. I planned on setting and forgetting the UDS. I loaded it up with regular KF and some Pecan chunks. Got into the drum at about 12PM, drum temp was about 250° on the top shelf. The lower shelf had a drip pan with warm water.

The flat still had a small fat cap, I decided to go fat cap on top in the drum.

Both sides were rubbed with Garlic, Kosher Salt & Black Pepper.

At about 160° internal I decided to foil the flat, never done that before. Here is the picture at about 7PM that evening, I did not test or check the temps. I used a disconnected probe and probed a couple of spots, it was like a hot knife through soft butter, I guess I over-shot it.

Although soft, it was delicious. The rub ‘o’ 3 spices was perfect and I did enjoy the au jus at the bottom of the foil pouch.

Packed some up in smaller vacu-suck bags for my portion controlled lunches!

Great looking brisket. I think I need 3 of the portion controlled bags to make a "MAX " brisket sammy. :wink:

Now that looks real good.. Are those the sample bags that your using to send to the brethern for the great brisket taste test ? Can't wait to get mine....

Yeah, but remember I my lunch time is about 10AM, unless I know I am working OT. And those slices are thick man!

Now that looks real good.. Are those the sample bags that your using to send to the brethern for the great brisket taste test ? Can't wait to get mine....
