My neighbors think I'm crazy!! But she's already a beauty!
It is hard to find drums in Germany, at least close by. Most have sealed tops and have oil in them or are too expensive.

I lucked out and found 2 drums with lids, got both for $30. Both had orange syrup in them and liners.

I decided to go with 3 intake vents. 3/4 ball valves

U.S size nuts are nearly impossible to find, so a friend welded the threads to the drum.

Sheets of expanded metal are very expensive. Smaller pieces can be bought at most "Home Depot" style stores.

Temps 320F - 360F
Final Internal temps before resting - Brisket 190F ; Butt 205F
Overall the meat was delicious, but the smoke ring was almost nonexistent. :frown: Not enough wood chunks or because I used lump?
Last smoke I used briquettes and it was great.

Great pics. I am loving my UDS. I think that we are going to try beef ribs this next weekend. A few more practice runs and I will try a whole packer brisket or a clod. My basket looks a lot like yours but I only made it 6" tall. I think that I need to go 8-12" so that I can fit more fuel.

Yea really nice to see some guys in Germany. I'm living pretty close to Cochem on the Mosel river. I was wondering how hard it would be to build an UDS while Im here. I figured I'd have to wait to get back to the states.

I may have to look into building one:rolleyes:

Check with some of the vineyards or you can probably get one in Wittlich. I've got a contact locally also. Send a PM.

WOW!! Cool drum and tasty looking grub!! I'd hit it all. Great job on the build too. Looks stout. I noticed you meat grate is closer to the fire. How does it seem to work for you? I've been thinking of adding a second lower grate, but don't know how close is too close to add another grate. Seems like the closer proximity to the fire is giving you food some nice bark and and sear. I may be trying this soon. Thanks for sharing.

drum looks sweet, still gotta build me one, one of these days i guess. In regards to the meats smoke ring, cooking up at 350-370 isnt gonna produce much, 2 things, meat isnt in the smoke long enough for good penetration, and at that temp the outside of the meat will almost seal itself, hence the lack of a huge smoke ring, it is there thou bud.
Grub looks good, my cuz is over in germany, im gonna send him ur way.
