Well first of all .....


I cheat! Yeppers, I cheat!


After all - isn't using pellets cheating :twisted:? I bought this thing called a "Smoke Daddy" from Dennis at: www.porkypas.com (http://www.porkypas.com/smokers)/smokers (http://www.porkypas.com/smokers) . It's basically an aluminum tube like a chain link fence post with caps on both ends. There is a screen in the tube near the bottom to keep the tree turds from falling down & blocking the air, which is supplied by an aquarium compressor.
I mounted mine on a 5 gallon pail from Menard's, bought two 10" diameter racks (I think that they were charcoal racks?) and made four 12" long rods out of 1/4" stainless to hold up the racks. If you can see the stand that I made from an old tomato cage, it's the center section of the cage so it will fit inside the bucket for storage.
This unit generates mucho smoke but very little heat - it raises the temp in the UCB (Ugly Cheese Bucket) about 5* to 10* above the ambient temperature. Or you can use only the bottom rack & put a bowl of ice on the top one. My next version will have more rack space & have a place for the ice :-D.

I bought one of those "Smoke Daddy's" also. Oversmoked the first batch of cheese but that was operator error not the "Smoke Daddy". Even smoked cream cheese and hunks of Velveta. I mounted mine on the side of my UDS. No temp. rise and lots of room with 2 grates. Very happy with it.

I think I am going to build an even uglier UCB (tonight), I have a bucket and a couple steel coffee cans. Thanks for the idea.

i built my own smoke daddy out of a pice of 5 inch stainless exhaust stack i had laying aound, and its hooked to a old camp bbq, still gotta mod the airflow real easy to oversmoke

Try pepper jack. I have done that a few times great results.

I sampled Dave's cheese at the Royal and it was outstanding! :thumb:
I think I need to add a Smoke Daddy to my to-do list. :becky:

Hi Dave,

I made a similar bucket using a soldering iron to heat the wood chips. Been a while since I used it....may have to do it again soon.
