View Full Version : Mayo on a Brisket?

Ok folks, I'm new so bare with me, my good buddy and neighbor (a transplanted texan) asks me yearly to do him up a brisket for his opening season hunt, (they always love it)
This morning he showed up with a brisket bathed in mayo and rubbed with montreal seasoning and pappys.
he has it wrapped in foil and put it in my traeger on smoke (about 180)

I asked him what the heck he was doing and he told me it was his brothers award winning texas recipe and thats how his brother told him to cook it.

When I explained that there was no reason to smoke it being wrapped in foil, he said he would open the foil when half done........

I fugure he's paying for the pellets, but it's driving me nuts!!

Oh yeah, I use his mower because mine blew up so...can't tell him to take the meat elsewhere... haha.. so my question is obvious, is this even close to anyones method??

HRH, sounds pretty off the wall to me. But, who knows. That is more brasing than smoking. Might as well use the oven.

Funny, thats what I told him, i even offered up my probe equiped GE profile for use,....he just kept staring at me...:icon_bugeyed

Wow, I am a San Leandran for the last 5 years, a buddy is Marina High '76.

HRH, I understand the friend thing as well. It just doesn't sound like bbq. The mayo thing is not the issue but the waiting to open it up later doesn't sound like you would get any resemblence of smoked flavor. It really isn't bbq to me with that method but if your friend wants it that way, go for it. Do a real low and slow for your friend and see what the reaction is. Hey, it's all fun!!!

He's from texas so.....the kind you chew of course.

Personally, I see zero reason to smoke it in foil, but I'm carefull not to shoot down an idea either, but in the back of my mind i keep thinking "better him than me"...

Never heard of it. Smoke flavor will probably still penetrate the foil, but there will be no bark. Mayo can actually help bark so I think he would have been better off without the foil.

How was it?

I was in Rudy's BBQ one day and they had a bunch of chickens lathered up in mayo and ready for the smoker. Maybe has something to do with breaking down the fat. t

bill - as much as i respect your exalted wisdom, please do not use mayo as a strawman for mustard. in the world we live in, mustard is the masculine condiment while mayo is feminine. Mustard has bold flavors on its own, whereas mayo, not so much. And lets not even go down the textural differences.

there's no way mustard on a girl's (or boy's :roll:) face is being confused for anything else

I really tried to stop reading this thread back in post #1 when the term 'transplanted Texan" was used. (still can't figure the mayo/foil procedure...)

My wife did chicken pieces years ago with a Mayo coating and dipped it in a Italian bread crumb and Parm cheese. She baked it and it was very good. She also made a Mayo Choc Cake that was awesome- would never know there was Mayo in it :biggrin:

I think the real issue here is this: real mayo is raw eggs & oil. Think about leaving coleslaw out on the table on a hot summer day for 12-16 hours.

That is basically what you are doing with a mayo covered brisket.



Now those folks on here that have an aversion to mayo due to it's texture color and consistency, well there is nothing that can be done about that - 'cept to tell ya......
mayo is not what makes ya gay :wink:

I think the guy was drunk and his brother really said "mustard" but could only remember it being some condiment...mayo??? mayo??? I'd like to see/hear how this turns out.

A local butcher shop/caterer I spoke with says for his pulled pork, he rubs then foils & smokes 5 hrs. Then removes foil & smokes another 5 hrs. He says it reduces cooking time & tastes good. He swears by this method. I may try it. I try to be open to new things.

Well I forced him to take it out of the foil last night, then at 1;30 AM it was at 175 degrees and it didn't look bad, not a great bark but not bad, when I got up at 6 AM it was gone and the smoker was cold. so I'm sure by now all the hunters are either happy or sick to there stomachs.. I'll foind out Monday when they get down from them thar hills.

I saw a recent forum post that stated you should not apply smoke to meat untill it hits 100*. Something about the pours of the meat needing to be properly open to accept the smoke. It was from an old Traeger recepie book...Ya never know.

I have smoked chicken slathered with mayo many, many times.
It gives the chicken a gorgeous bronze color that looks very appetizing.
I would not hesitate to use a mayo slather on brisket, and will make it a point to do so now.
The chances of the mayo spoiling are not a concern to me due to the HIGH acid content in the mayo.
I don't think bacteria could survive in it...:mrgreen:
I do not agree with the foil first theory. How can the smke penetrate the foil? I don't think the bark would set either.
I would have smoked it unfoiled until the mid point of the cook.
Let us know what you hear about the flavor...
