Hey Everyone,

So I have finally reached a place where it is time I bottle my sauce and rubs. I have done some reading on the subject but wanted to solicit some 'real world' experiences before I jumped in.

Any thing you could share would be appreciated.

Man that is such an open question and one that can take you down so many avenues. What specifically would you like to know about? Business side? Production? Marketing?

1) Make sure you have the pH tested and nutritional values done on your sauce. Here in Missouri you can have the University Food Sciences Dept. do a workup on it and make sure it's safe for bottling and whether or not you need to bottle it hot or cool. Get a nutritional facts done for your rub.

2) Get your UPC codes bought. Have your wallet unless you can get into a coop like here in Missouri with the Dept. of Agriculture.

3) Get insurance

4) Find bottlers and spice companies and get bids on your products. (Non disclosure agreements signed before you turn any recipes over)

5) Have a fat bank account.

6) Get your labels designed and make sure they abide by federal laws. http://www.fda.gov

Hope some of this helps. This will get you started.

Production is what I am looking for. Guess I could have been a bit more clear.

Along with your Nutritional information, you will also need an Ingredient listing. Ingredience must be listed Most to Least. If not correct , the FDA can make you re-call all of your product and correct the listing.

A good contract bottler can do Nutritional and Ingrediant listing for you for a small fee. Usually less than $ 100.00

I think you'll want to talk in depth with folks that have done this and failed. If
nothing else, learn what they think they didn't do or did wrong so that you're
not destined to repeat their failure. For that matter, see if you can get the
ear of a few that are making a few dollars too; learn from their mistakes as
well as what they think they did right.

The marketing type of guy in me says "determine your market". Target them,
from everything from name and brand, to labeling, and then sales/distribution.
Also, try if you can to not hit a saturated market. If you do, make certain that
yours stands out. You have to get that initial sale, and then hopefully you'll
get the repeat sales as well.

Best of luck.

Your post got me thinking.. I did a little research after reading your thread and from what I found, prob the best way is to find a small co packer in your area that will help you with everything. similar to this one

http://www.greenmountaincopack.com/ (http://www.greenmountaincopack.com/)
Only one near me that will do that sort of thing. I found it on this web site
http://www.nysaes.cornell.edu/necfe/CoPackerKitchen/index.html (http://www.nysaes.cornell.edu/necfe/CoPackerKitchen/index.html)

that being said.. I know the Brethren trade regional commercial sauces but do they trade/sample sauces and rubs that are made in a non commercial kitchen (i.e. mine) ????? and give well deserved and lavish praise??? err I mean critiques and advice?

Just join the next rub/saucetrade in the Trading forum. You will get specific instructions on how to join, and when the net trade round will be. Or, if you feel lucky, offer up a tre to someone pecific.

Just make sure they have tenure and post here. Don't ask how I know.
