View Full Version : Game Hens and Rice on the fire

Another campfire meal. :oops:

I brined some game hens in water, kosher salt, cracked black pepper, red pepper flakes, onion and garlic.


Crispied up some bacon in my cast iron pot...


Sauteed some onion, green onions and garlic in the bacon drippings...


added butter and chicken broth...then the rice...



Spatchcocked the hens for even cooking...



Had to move my rice.... to fry more bacon.


Added bacon and green onions to the rice....


The birds weren't very pretty but they were moist and tasty!



Note... this was not my plate! lol There is no way I could eat a whole game hen. I ate one hind quarter, some rice and cucs.

Nice meal. I especially like the rice! Don't worry about how those chickens look, they look delicious. Besides, I've had a lot of pretty food that tasted like chit.

Just one observation, needs more peppah!

As usual Jeanie you have done an amazing job there. I am not that crazy about Rice,,(I do eat it) But yours made my mouth water, and them hens looked great to me, The dishwasher is still available ,wink wink.. Keep em coming.....

I can't even imagine what you could cook if you actually lived in a house with a kitchen and everything. But the food you turn out is amazing considering you appear to live in a tent...
