After last weeks brisket-becomes-chili-meat incident, I jumped back on the drum and Qued another one.
I was still having issues with adding coals without losing temp so I built a starter chimney. Hopefully I have that under control.
Here is my pron offering.

I cut it right down to the corner bark, and almost had a true smoke ring.

I also made MOINK balls this weekend.
I think spatchcock chicken, and fatties next weekend.

Yep. That there is a very nice looking brisket. You can see it is tender and the reflections indicate juicy. Congrats!:cool:
