Threw on a 3+ pound corned beef that I started soaking a few days ago.
Rubbed it down with some Montreal Steak seasoning and put it in the Egg over some Royal Oak and Hickory chunks.

Closed the lid, got her to 230 degrees and let the magic happen....

9 hours later...

Cranked the heat up on the Egg and made rubens.

Ooo, that looks pretty darn tasty. And reubens are such a good use of pastrami.

Jon -

Throw a corned beef on the smoker.... when it's done you have Pastrami!
I get corned beef from the store - I don't corn my own. I like to soak it for a few days, changing the water out at least once a day to help pull some of the salt out. Use whatever rub you like - Montreal Steak is what I have used in the past but I want to start experimenting with other ones.
Don't wait - give it a try, you will not be disappointed.

Just like corned beef hash but you use pastrami - and yes Larry - that is on the breakfast menu. - Hash and eggs...... it will be my first time making hash so it will be interesting...

OMG That looks fantastic. I tried it once but started from a beef brisket Was way too salty Threw it out. Rubens are my favorite sandwhich

I need to make a batch of pastrami next weekend..... I've put up about 15 jars of pickles this week and some of the hot dills could use some pastrami to keep them company.

Rubins one of my favorite sandwiches,as long the kraut has been rised and not salty..others are Muffulatta,Hot Roast Beef Po-Boy Dressed,Fried Shrimp, or Fried Oyster Po-Boy! Gosh! I'm getting homesick!

Ok LMAJ thatr looked awesome! I love pastrami.

Ok we recently got a half of a half of cow and their was the cutest little brisket. I was like what am I going to do with that. I think if my bride doesn't have anything planned for it I may trying to go start to finish including the corning.
