Ok Thanks to Norco, My 1st UDS is now up and running! ( It was a bad thermo, unless water boils at 175......) numbers 2-5 will be coming soon.

Her is the finished product and the ribs I cooked.

Just an fyi these rib bones were about 10 inches long they were from our breeders that we had to get rid of this summer so the pigs were about 3-4 years old not a lot of meat on them but wow was it delicious. I used the 2 1/2-2-3/4 method on the UDS and they cam out perfect, my best ribs yet. (Its officially coming to comps with me next week!)

That last picture is what it is supposed to look like. Nice looking grub! The more you cook them more you'll love your drum.

Congrats on the sucessful cook. Remember shoot for 200-220 on new gauge and will get @230-250 center.
