All the meat markets and grocery stores are putting briskets on sale for the upcoming Rosh Hashana holiday--whole, 1.79/lb, first cut flat, 3.39/lb. Til now, I've been too intimidated to give one a try, but at these prices I'm talking myself into it. Last month there was a thread that went thru the process step-by-step, but I can't find it. Anyone familiar with it?

Down here, HEB puts packers on sale for under a buck a pound. Our church men's group bought 60 briskets from Sysco for $1.05 per pound over the 4th of July weekend for a fund raiser.
