After the dissapointing ribs yesterday I decided to do some pork chops, pineapple, and stuffing in the dutch oven for supper tonight.

Stuffing, 6 chops, a mustard and apricot preserve glaze, topped with pineapple rings.

The stuffing didn't set up as much as I thought it would, and it wasn't pretty but it was tasty. The weather turned cool this afternoon and this really hit the spot.

You know, I've never used my dutch oven anywhere but in the regular oven. Need to get a set up where I can use charcoal. :-)

I love dutch oven cooking. And that's a great example of why.

Thanks...

Gary - the chops went about an hour.

Char - the tomato pie...

Precook 1 pie crust and let it cool.
Slice or dice up enough tomatos to fill the crust. Let them drain well.
Cut up some basil (fresh is best) Mix it in with the tomatos
Mix
1 cup of Mayo
1 cup of your favorite shreaded cheese (I use a mix of chedder and jack)
Spread the mayo/cheese mixture over the tomatos.
Cook in a 350 degree oven for 20 - 30 minutes until the cheese mix is bubbly.
Enjoy!
