Made my first ever attempt at chicken thighs and St. Louis spares on my tiny little offset smoker (floor model, Wal-Mart, bent shelf for $30). I bought the little sucker a year ago, did a butt and some bb's and it wasn't very good, so I let it sit and rust while I perfected my butt technique on my (gasp) gasser! I actually had the poor thing in a garage sale, but luckily, nobody bought it, and I came to my senses and found this forum! I'm saved! Can I get an Amen?!

I sauced the thighs and the ribs with a sauce made from my wife's recipe collection. I think she once told me it's a Tony Roma knockoff, but I'm not sure about that. I was amazed at how good they turned out, though. Next time I'll brine 'em and see if that makes 'em even better!

I learned alot about controlling my temps on this cook. The next run should be more consistent as I become more intuitive about the way the coals behave. I have gotten tons of ideas from all of you and can't wait to try them out!

And for the record, I wouldn't go into battle with a chicken with anything less than a switchblade. I don't trust them suckers! One of them beat me at Tic-Tac-Toe at the county fair when I was a kid and I've been leery ever since!
