I went camping last week, it was good to get away for awhile. :biggrin:

This is one breakfast I cooked while there.

For the corncakes, I use...
1 cup of flour
1/4 cup of cornmeal
1 1/2 tsp baking powder
1/4 tsp of salt
1 tsp of sugar
1 egg
About 1 cup of milk or more if needed for a thinner batter
1 cup of corn
Chopped green onion

Them grits look awfully tasty too I might add. Nice looking vittles.

wow Jeanie, that brought back memories! I used to make corncakes for all my buddies years ago on camping trips. Looks yummy, and of course I insist on REAL maple syrup!

Have not had corncakes since I worked a summer at a mountain camp in Tennessee - cook made corncakes and frog legs from the sack-full we brought her - still one of the best meals I ever had (or ever will) - thanks for kick-starting my memories.

lol Thanks everybody! I did have a lot of eggs, fried potatoes, bacon, and beer through the week. I had to have a bit of fruit to make my plate look healthy. :biggrin:

That looks like a perfect plate.

We called them Hoe Cakes or Johnny Cakes when I grew up. I have several old griddles with bails that work really nice for over-the-fire cooking.

Now THAT'S what I call camping!!

Just a few weeks ago, I had an old box of jiffy cornbread mix that was probably a year out of date (I usually cook from scratch). I saw the instruction for Johnny cakes and gave it a try. 41 years living in the South and I had never had Johnny cakes. The kids loved it too.

Cowgirl's corn cakes look wonderful for serving with summer veggies and maybe a steak. What am I saying... breakfast was impressive too. Thanks for the idea and pics!!!
